Pepperoni Roll-Ups

I've been surviving the dining-in experience, but it hasn't been the most exciting endeavor I've ever undertaken. I find that I default to the things I know when I'm in a hurry, which is almost always. So there have been lots of soft tacos, sub sandwiches, etc.

I found an idea on Pinterest that was a new twist on an old stand-by, so I thought I'd give it a try. Instead of hot dogs in crescent rolls, it was pepperoni & cheese. Super easy, and pretty tasty, all things considered.

It goes without saying that the kids LOVED these. In fact, I think I might have to make 2 cans of crescent rolls next time... we're kind of getting to that phase of life when the boys are starting to eat more than we do, so 8 little crescent rolls is no longer enough for us. *lol*

At any rate, these will definitely be put to use again when it comes to crunch time for dinner, or maybe for a lunch on the weekend or during the summer.

checking in

well, i've been managing to cook more than eat out, but i have not succeeded in avoiding the drive-through altogether. i'll try to come back soon and share some of the quick and easy recipes i've used over the past few days to keep us on track a bit. right now, quick and easy is my friend. and with the sports schedule that we're facing for the next few months, i think it will become my BEST friend before summer gets here!

Fail.

Major fail.

I was doing SO well. And then... I ran out of time to go to the grocery. So we ran out of food to cook. And I caved. Three times in one weekend. EEEEP! McDonald's (of all things!), then take-out Asian (soooo worth the cheat, yum!), and then Wendy's last night (uggh!). Seriously! And I STILL haven't gotten to the grocery... so who knows what tonight will bring! *sigh* I need to get my act together here!

So far...

Well, so far we've managed our crazy week. Tuesday night we had what my kids lovingly call 'random dinner' which means they can eat whatever random thing they come up with. Usually for them, this means they have cereal... peanutbutter Cheerios this time (which are surprisingly good, and we will definitley be buying those again in the near future... my kids killed the box in about 3 days). I ate grapes and tortilla chips with sweet onion salsa. Random. Thus, the name 'random dinner.'

Last night we did soft tacos. Quick. Easy. Kid favorite. Not sure about dinner for tonight. Maybe cheeseburgers? I got a good deal on super-lean ground beef this week, so whatever it is, I'm betting it will have beef in it. I'll try to make it something interesting and yumy so I can pass along at least one recipe to you this week... no promises though. My primary goal is to survivie the week without caving to the drive-through.

Wish Me Luck!

I have a feeling this week is going to be quite a challenge for me to keep on track with not eating fast food. Already, we sort of hit a snag... Sunday we ordered pizza for the Super Bowl. We had some left over, so we had that for dinner last night. Now I'm facing a crazy busy week with very little time in there for cooking.

Tonight I have to spend about 2 hours during gymnastics practice sorting through medals for the meet that's coming up this weekend.

Tomorrow evening, after gymnastics, we have the informational meeting for Isaac's football sign-ups.

Thursday is more gymnastics, and my night to car-pool so I won't be home then.

Friday is set-up for the meet AND another practice.

Saturday all day I'll be working the meet (plus Meagan has a birthday party to go to).

And Sunday morning I work the meet while Sebastian competes, then we leave from there and head straight to Meagan's meet that's about an hour or so away.

Somewhere in there I need to find time to go to the grocery, clean out the van, pay the bills, do the laundry for the week, and buy a birthday gift for Meagan's friend. I am having a hard time seeing how that leaves any time for cooking. So this is the kind of week where I'm really going to be put to the challenge. Having now a part-time job right in the middle of each weekday also cuts down significantly on any make-ahead time I would have otherwise had... So wish me luck! We'll see how this goes!

Breakfast Sandwich, the healthy version

I mentioned the other day that I have recently started Weight Watchers. Both Lucas and I have made the decision that we really need to change some things about the habits we've formed and the choices we make. Day 1, right out of the gate, I discovered that my breakfast eating habits were probably a major contributor to my less-than-sleek physic as of late. I mean, I KNEW that what I was eating was probably not GREAT, but I had no idea really that it was as bad as it is.

Which presents a problem. I like what I like. I'm a protein breakfast girl. I like breakfast sandwiches and breakfast burritos and so forth. So I set out on a mission to compile a not-so-disgustingly-bad-for-you breakfast sandwich. Here's what I came up with...

Review: It was GOOD!! I didn't feel like I was missing out at all! It was super tasty, and very satisfying. As for points, made with one sausage patty, it is 5 points instead of the whopping 9 or 10 that I would have had to count with my old version of breakfast. With 2 patties, it goes up to 7. The sodium is also incredibly high with 2 patties, so be careful of that. I really think that 1 patty is sufficient for this. It may not look like much on the muffin, but it's surprisingly filling. I'll definitely be doing this one again.

Tips:
I used sugar-free pudding and fat free cool whip on this. This made it diabetic-friendly and only accounts for 3 Weight Watcher points. Tasted fantastic!
